New Mexican Red Chile Marinara Pasta
Red chile gives this linguini a delicious New Mexican twist!
Ingredients
- ½ cup olive oil
- ½ cup yellow onion diced
- 2 tsp. garlic minced (about 1 clove)
- ½ tsp. BUENO® Oregano crushed
- 1-14 oz. container BUENO® Red Chile Puree thawed
- 1-3 oz. can tomato paste
- 1 tsp. tsp. salt
- ¼ tsp. black pepper
- ½ cup water
- 1 pound linguine pasta cooked
- 1 cup freshly grated Parmesan cheese
Instructions
- In a 3 quart saucepan, heat olive oil over medium heat.½ cup olive oil
- Add onion and garlic. Sauté until translucent.½ cup yellow onion, 2 tsp. garlic
- Add oregano and stir briefly for 1 minute to release aroma.½ tsp. BUENO® Oregano
- Stir in all remaining ingredients except Parmesan cheese and pasta.1-14 oz. container BUENO® Red Chile Puree, 1-3 oz. can tomato paste, 1 tsp. tsp. salt, ¼ tsp. black pepper, ½ cup water
- Simmer sauce over medium low heat for 15 to 20 minutes, uncovered.
- For every 1 cup cooked pasta, add 1/2 cup marinara sauce.1 pound linguine pasta
- Top each serving with cheese, if desired.1 cup freshly grated Parmesan cheese
