New Mexican Red Chile Marinara Pasta

Ingredients
  

  • ½ cup olive oil
  • ½ cup yellow onion diced
  • 2 tsp. garlic minced (about 1 clove)
  • ½ tsp. BUENO® Oregano crushed
  • 1-14 oz. container BUENO® Red Chile Puree thawed
  • 1-3 oz. can tomato paste
  • 1 tsp. tsp. salt
  • ¼ tsp. black pepper
  • ½ cup water
  • 1 pound linguine pasta cooked
  • 1 cup freshly grated Parmesan cheese

Instructions
 

  • In a 3 quart saucepan, heat olive oil over medium heat.
    ½ cup olive oil
  • Add onion and garlic. Sauté until translucent.
    ½ cup yellow onion, 2 tsp. garlic
  • Add oregano and stir briefly for 1 minute to release aroma.
    ½ tsp. BUENO® Oregano
  • Stir in all remaining ingredients except Parmesan cheese and pasta.
    1-14 oz. container BUENO® Red Chile Puree, 1-3 oz. can tomato paste, 1 tsp. tsp. salt, ¼ tsp. black pepper, ½ cup water
  • Simmer sauce over medium low heat for 15 to 20 minutes, uncovered.
  • For every 1 cup cooked pasta, add 1/2 cup marinara sauce.
    1 pound linguine pasta
  • Top each serving with cheese, if desired.
    1 cup freshly grated Parmesan cheese
