Ingredients
  

  • 1 small onion chopped
  • 1 small green bell pepper chopped
  • 1 Tbsp. olive oil
  • 1 cup jarred BUENO® Hatch Green Chile Sauce
  • 1 lb. orange roughy fillets
  • 2 cups cooked rice

Instructions
 

  • Sauté onion and bell pepper in olive oil.
    1 small onion, 1 small green bell pepper, 1 Tbsp. olive oil
  • Add green chile sauce. Bring to a simmer on low.
    1 cup jarred BUENO® Hatch Green Chile Sauce
  • Add fillets to sauce. Spoon sauce over fillets.
    1 lb. orange roughy fillets
  • Cover and cook over low heat 15-20 minutes.
  • Serve over cooked rice.
    2 cups cooked rice
