Orange Roughy New Mexican Style
Orange Roughy New Mexico Style with Hatch Green Chile Sauce, onion and green pepper is quick, easy and healthy. Perfect for a light summer meal!
Ingredients
- 1 small onion chopped
- 1 small green bell pepper chopped
- 1 Tbsp. olive oil
- 1 cup jarred BUENO® Hatch Green Chile Sauce
- 1 lb. orange roughy fillets
- 2 cups cooked rice
Instructions
- Sauté onion and bell pepper in olive oil.1 small onion, 1 small green bell pepper, 1 Tbsp. olive oil
- Add green chile sauce. Bring to a simmer on low.1 cup jarred BUENO® Hatch Green Chile Sauce
- Add fillets to sauce. Spoon sauce over fillets.1 lb. orange roughy fillets
- Cover and cook over low heat 15-20 minutes.
- Serve over cooked rice.2 cups cooked rice
