Hatch Green Chile Calabacitas

Our Hatch Green Chile Calabacitas are a delectable combination of Hatch green chile, corn and squash. Perfect compliment to your favorite New Mexican dish. Add beans for a perfect vegetarian meal.

Ingredients
  

  • 2 Tbsp. vegetable oil
  • ¼ medium onion finely chopped
  • 1 13 oz. container BUENO® Hatch Autumn Roast® Green Chile
  • 2 medium zucchini squash chopped (not peeled)
  • ¾ cup frozen corn
  • 2 cloves garlic minced
  • tsp. salt
  • tsp. pepper

Instructions
 

  • Heat oil over low heat in a non-stick skillet. Sauté onion in oil.
    2 Tbsp. vegetable oil, ¼ medium onion
  • Add frozen green chile. Cook on low heat (minimum 165ºF) for 15-20 minutes.
    1 13 oz. container BUENO® Hatch Autumn Roast® Green Chile
  • Add zucchini and cook over medium heat for 5 minutes, stirring occasionally.
    2 medium zucchini squash
  • Add corn, garlic, salt and pepper.
    ¾ cup frozen corn, 2 cloves garlic, ⅛ tsp. salt, ⅛ tsp. pepper
  • Cook uncovered over low heat for 8 minutes or until squash is tender.
