New Mexican Avocado Toast is a Southwestern take on the trendy Avocado Toast that is on every brunch menu. Tortillas and Salsa add flavor and pizazz.
Ingredients
- 1 pkg. BUENO® GRANDMA'S® Tortillas
- 5 avocados
- 1 Tbsp. light sour cream
- 2.5 cups fresh tomatoes diced
- 12 large eggs
- salt to taste
- black pepper to taste
- BUENO® Hatch Salsa to taste

Instructions
- Heat tortillas on griddle until lightly toasted and firm.
- Remove skin from avocado and mash flesh with fork.
- Spread 2 Tbsp. avocado over surface of tortilla followed by 1 Tbsp. sour cream.
- Sprinkle tostada with 1/4 cup diced tomatoes.
- Fry eggs individually, add salt and pepper to taste and place on layered tostada.
- Add Salsa to taste.
