Chile con Papas (Chile With Potatoes)
This is a hearty, traditional dish, perfect alone or with a bowl of beans. There’s nothing that says comfort food like fried potatoes and red chile!
Ingredients
- 2 Tbsp. vegetable oil
- 4 small potatoes peeled and cubed
- 1- 14 oz. container BUENO® Frozen Red Chile
- 3 cloves garlic finely minced
- 2 cups water
- 1 tsp. salt
- ½ tsp. BUENO® Oregano crushed
Instructions
- Heat oil in a non-stick skillet over medium heat.2 Tbsp. vegetable oil
- Fry potatoes in oil, stirring frequently, until golden.4 small potatoes
- In a separate saucepan add frozen red chile and and cook about 10-15 minutes.1- 14 oz. container BUENO® Frozen Red Chile
- Once red chile is cooked, add garlic. Blend well.3 cloves garlic
- Pour in water. Add potatoes, salt and oregano. Bring to a boil. Simmer for 15-20 minutes uncovered.2 cups water, 1 tsp. salt, ½ tsp. BUENO® Oregano
