Hatch Green Chile Calabacitas
Our Hatch Green Chile Calabacitas are a delectable combination of Hatch green chile, corn and squash. Perfect compliment to your favorite New Mexican dish. Add beans for a perfect vegetarian meal.

2 Tbsp. vegetable oil ¼ medium onion finely chopped 1 13 oz. container BUENO® Hatch Autumn Roast® Green Chile 2 medium zucchini squash chopped (not peeled) ¾ cup frozen corn 2 cloves garlic minced ⅛ tsp. salt ⅛ tsp. pepper
Heat oil over low heat in a non-stick skillet. Sauté onion in oil.
2 Tbsp. vegetable oil, ¼ medium onion
Add frozen green chile. Cook on low heat (minimum 165ºF) for 15-20 minutes.
1 13 oz. container BUENO® Hatch Autumn Roast® Green Chile
Add zucchini and cook over medium heat for 5 minutes, stirring occasionally.
2 medium zucchini squash
Add corn, garlic, salt and pepper.
¾ cup frozen corn, 2 cloves garlic, ⅛ tsp. salt, ⅛ tsp. pepper
Cook uncovered over low heat for 8 minutes or until squash is tender.
