Red Chile Sauce with Pork (from Red Chile Powder)
For a taste of home, Chile Colorado (Red Chile Sauce) is a traditional New Mexican sauce to use in enchiladas, tamales, burritos and posole to give Southwestern flavor. Also you may pour it over eggs, fish, pork or any type of meat to enhance its flavor.

2 lbs lean pork cut into 1/2" cubes 1 qt water 1 Tbsp. vegetable oil 1/3 cup unbleached flour 2/12-3 cups water 6 Tbsp. BUENO® Special Reserve Red Chile Powder` 1 clove garlic chopped 1 tsp. salt to taste
Brown meat over medium heat in large skillet
2 lbs lean pork
Cover with 1 qt. water and boil 30 minutes.

In another saucepan, heat vegetable oil overmedium heat.
1 Tbsp. vegetable oil
Stir in flour until roux becomes a medium brown.
1/3 cup unbleached flour
Add 2 cups of water.
2/12-3 cups water
Stir in red chile powder until any lumps dissolve.
6 Tbsp. BUENO® Special Reserve Red Chile Powder`
Add remaining water if a thinner sauce is desired.
Add garlic and salt.

Combine red chile sauce and meat mixture.
Simmer approximately 30 minutes.
