Our Hatch Green Chile Calabacitas are a delectable combination of Hatch green chile, corn and squash. Perfect compliment to your favorite New Mexican dish. Add beans for a perfect vegetarian meal.
Ingredients
- 2 Tbsp. vegetable oil
- ¼ medium onion finely chopped
- 1 13 oz. container BUENO® Hatch Autumn Roast® Green Chile
- 2 medium zucchini squash chopped (not peeled)
- ¾ cup frozen corn
- 2 cloves garlic minced
- ⅛ tsp. salt
- ⅛ tsp. pepper

Instructions
- Heat oil over low heat in a non-stick skillet. Sauté onion in oil.
- Add frozen green chile. Cook on low heat (minimum 165ºF) for 15-20 minutes.
- Add zucchini and cook over medium heat for 5 minutes, stirring occasionally.
- Add corn, garlic, salt and pepper.
- Cook uncovered over low heat for 8 minutes or until squash is tender.
