New Mexican Chile Salmon is a delicious take on salmon. Infused with New Mexico grown red and green chile. A healthy, flavorful dish.
Ingredients
- 2 lbs. skin-on salmon fresh
- salt & paper
- ¼ tsp. coriander ground
- 3 Tbsp. canola oil
- ½ small bell pepper finely diced
- 3 scallions finely diced
- 1/3 cup BUENO® Jarred Red Chile Sauce
- 1½ Tbsp. barbecue sauce
- 3 Tbsp. rice vinegar
- 2 Tbsp. BUENO® Flame Roasted Green Chile Sauce
- 1 cup shitake mushrooms small diced
- ¼ cup water
- 1 tsp. corn starch

Instructions
- Season salmon with salt, pepper and ground coriander.
- Cook salmon in oven at 350ºF for 7-8 minutes. Salmon will spring back to touch.
- In a pot, add oil and add bell pepper, scallions, red chile sauce, barbecue sauce, rice vinegar, green chile sauce, mushrooms, water and corn starch. Cook 3-4 minutes until sauce is slightly thickened.
- Remove salmon from oven and pour sauce mixture over the top.
- Return to oven and continue to bake 2-3 minutes.
- Remove salmon from oven. Serve over a bed of greens.
