Our Morning Glory Pancakes, made with blue corn tortillas, whole wheat flour and blueberries are healthy and delicious. Perfect for brunch.
Ingredients
- 6 Buenatural Blue Corn Tortillas
- ½ cup whole wheat flour
- 1 Tbsp. baking powder
- 3 tsp. sugar
- ¼ tsp. salt
- 1 egg
- ¾ cup milk
- 2 Tbsp. vegetable oil
- 1 cup frozen blueberries
- Confectioner's sugar

Instructions
- Grind tortillas in a food processor for 20-30 seconds until coarsely ground. Mix together with the next 4 ingredients.
- Beat egg, milk, and vegetable oil together. Add to dry ingredients and mix until moistened.
- Fold in blueberries.
- On heated griddele, cook over medium heat on one side approximately 2 minutes or until pancake begins to rise. Flip and cook 1-2 additional minutes until cooked through.
- Sprinkle each stack with confectioner’s sugar. Serve with berries and a dollop of whipped cream if desired.
